My mother used to make this frosting too. She burnt up a few mixers making it, the steam from the water would mess up the gears inside. She always put it on my brothers birthday cake. She would make him a homemade angel food with Seafoam icing. I always liked this frosting, but haven't made it for years.
Thanks for bringing back alot of memories.

It is similar I think. She didn't add anything to the frosting so it was actually just globs of frosting. Did the seafoam your mom made get a thin crust on it when it sat for a while--like a day? Mom's did and I think that is what made it work for a "candy".

PrettyKitty--I got so distracted by the mention of seafoam frosting that I forgot to say your frosting looks wonderful. Your swirl is very pretty.

I can't believe no one uses kitchen scales in the US?

Thanks - I do use a kitchen scale - but it weighs in ounces - and I use it mostly for postage

I use scales. Have a digital one I bought at Bed, Bath & Beyond. Call It my drug dealer scale cause it is what you see in the movies. But thanks for the conversion. I never learned metrics in school. Is the the same as 7 minute boiled icing. Mom use to always make this & put on coconut cake, it was wonderful.
