    Loretta, divinity is not hard if you have a good mixer & you really need a candy thermometer. I have even made it on rainy days & it still comes out perfect. I'll send you a recipe if you like.

    Professional baker's and candy maker's use scales here, but we laypeople just use measuring cups and spoons :wink:

    know this icing from my childhood too, and I have made it, but not in years. Holidays are so busy now, I have to pick and choose, what gets made from scratch, all the food, but icing...I do the can, too.

    The UK's version of Martha Stewart (but I'm guessing not as "scary"). Those cakes look absolutely beautiful...I'm sure you could do this professionally...fantastic presentation and people would be more than happy to pay well to have you cater for them...Thanks for sharing your recipe.
