    WOW! Thanks! Another good recipe to add to my Mexican Cuisine! I do a similar thing with shredded chicken enchiladas, but just line them up in a casserole and pour some enchilada sauce over, sprinkle with fresh onion and cilantro and cheese and bake for about 35 min. at 350.

    These when you put the spray or oil on them the tortilla gets nice and crispy almost like the fried ones but with a ton less calories :D
    I am looking forward to leftovers tonight. My husband is taking the boys out to dinner tonight then shopping for mommy's birthday. I do wonder every year what they will end up bringing home. So I'm on my own for dinner tonight....

    I make chimi's in the oven as well. My recipe is fairly simple. I take shredded meat, spicy salsa and shredded cheese (optional. I brush my tortillas with butter, fold and bake! Family loves them and they freeze amazingly well!
