Banana Peel Taco Filling
OK, all you conservative cooks. Bring on the comments.
Here is a recipe, of sorts, that I found in the latest issue of VEGNEWS: "The A to Z Guide To Tacos," by Richard Bowie.
Don't toss those banana Peels! Instead, scrape them clean, shred and saute within vegan beer, smoked paprika, cumin, garlic and oregano for a crispy, juicy, no-waste take on carnitas.
I haven't tried it yet...should I?

I don't know about banana peels . . . I do have a recipe for vegan taco "meat" made from quinoa that I've been thinking of trying.

Hang on, does the recipe use the 'scrapings' or the 'peel'? Ok, just did a google search. Turns out banana peels are completely edible but one must be very careful to scrub thoroughly to remove any possible pesticides. Not going to be on my menu any time soon, but hey, go for it and the rest of us can live vicariously through your adventures in cooking!
