    1 lb ground beef and chopped onion browned and drained
    Return to pan Add 1 cup rice, 2 1/2 cups water 3 beef boullion cubes
    1 1/2 tsp dry mustard( i use reg. mustard if I don't have any dry)
    Bring to boil, reduce to simmer and cover for 15 minutes.
    Remove cover and add 1 chopped tomato, and 1/2 green pepper. Cover and simmer for 5 minutes Then add 8 oz of Monterey Jack Cheese Cover and remove from heat Ready to eat in 3 minutes once the cheese melts

    Awesome recipe! If you like spicy try some chili powder in it too! Thanks for reminding about this wonderful and easy dish! I'm going to make it this week. My family likes elbow noodles in this too. Kind of like a non-processed, salt-laden Hamburger Helper.

    Here are my changes....Beef broth for the water and Rotel Tomatoes and Chili (any variety) for the Tomato. I live in New Mexico and we eat chili in everthing! I put this in the crockpot to keep hot at a potluck and got rave reviews.
    Thanks for the idea for me to "embelish upon.
