I love potato soup and the recipes sound close to the one I use. I have one extra tip, I peel and cut my potatoes in half and slice them on my mandolin. They cook much faster this way and I can have potato soup quicker.

Made this soup yesterday - added a can of whole kernel corn and it was delicious! Had it ready when hubby came home from golfing and he wolfed it down!! Thanks!

Made this for supper last night. Since there's only 2 of us it was more than we need but will just freeze it. Best soup I've had in a long while. Going to have it for lunch today. DH had to have a ham sandwich with it though. Always has to have a sandwich with soup no matter what. LOL!!

My recipe is different. I peel and cook the potatoes in water, cooking carrots and onions separately. I drain the potatoes, keeping the water. I mash the potatoes, adding butter, carrots, onions and salt and pepper. We like cut up hot dogs in ours, but you can add ham or whatever. The secret I have is adding a small carton of sour cream. Then, while it is reheating, add back the drained water to make it the consistency you want. The three secrets are pepper, sour cream and butter - this is quick and easy. Do not freeze, as the sour cream will not take it.

I had this yesterday, it was delicious. I think I could have made the white sauce a little thicker but it was very tasty. thank you again . you did not say what size of chicken broth you used, but I used the 2 quarts I had in the freezer, and it was just the right amount.

Thank you for this recipe, it sounds like the yummy one served at the Saunder's lunch counter in Dearborn MI. It was the best I ever tasted.

    2 cups milk
    2 cans chicken broth
    2 cups water
    5 tablespoons margarine
    5 tablespoons flour
    ½ tsp. thyme
    3 tablespoons chives (dried)
    Salt and pepper to taste
2 cups grated cheddar cheese (or can use velveeta)

Place diced bacon in large soup pot and cook until crisp. Add onion, celery and diced potatoes along with chicken broth and water. Add chives, ham, thyme and salt and pepper. Bring to boil and lower to simmer, cook about 30 minutes or until potatoes are done. Mash with potato masher to break up some of the potatoes into small pieces. Meantime, put margarine in saucepan and melt, whisk in flour and milk until white sauce is thickened. Add cheese and melt, stir well and pour into soup pot with rest of mixture….bring to simmer for about 5 min. Serve with cornbread muffins with honey butter….YUM YUM
I made this last night for dinner. It was absolutely delicious. Thank you for the recipe.

I made this yesterday too. It IS the best potato soup I've ever had! Thanks for the recipe. I sprinkled shredded cheese over each bowl as it was served. YUMMY!
