    I didn't know his name for the longest time. I'd watch Good Eats (his show) or Iron Chef (which he hosts) when I'd go stay the night at other people's places and I'd never catch his name.

    I like his knowledge and how he explains things. He makes sense out of the science of food and explains it in a way that is fun and/or hilarious (and sometimes with puppets). And so far the recipes I've made of his have never failed. And I liked the fact he had a soup recipe very similar to the leek and potato soup Remy made on the movie Ratatouille (I'd watch it and want that soup...now I can make it). Alton's my second favorite chef...only second to Iron Chef Masuhara Morimoto :)

    I wanted to do this for t-day, but my hubby had decided he wants to smoke the turkey. We had a smoked deer ham last night for dinner. A little smoked meat goes a long way with me, and to have it two times in one week, then leftovers, well, it's just too much. I'm disappointed.

    Just a note for anyone who tries this: if your turkey sticks out from the sides of the sheet the slightest bit put a pan on a lower rack to catch the drippings. Last year a fire started in the stove because the drippings dripped onto the bottom of the stove and this year we forgot to put pans down right away and the overly sensitive smoke alarm went off several times (we're all kind of deaf now...no fires though).

    Flying V Goddess: Thank you for the website for this turkey. My bIL is really anxious to try this.

    Had a smoked turkey, and even though I didn't want one, I have to admit, it was awesome! (so I didn't get to try this recipe)

    I just saw this post and wished I would've seen it before! What a great way to do the turkey.. Our turkey was good, but Alton's turkey looks so much better!..

    I'm going to do my Christmas turkey in a roaster that many were discussing over on the other forum. Do you think you could do this technique the same way in a roaster?

    This will be my first time in using it, so I'm open for all ideas...
