    I'm not sure. I think the video I posted wasn't the full episode (couldn't find the original video we saw last year on the Food network website). In the full episode, Alton says the reason for using the raised cookie sheet instead of a deep roasting pan had to do with the way heat travels. In a deep roasting pan the heat will travel up the sides and all that heat will go to the top of your turkey and dry out the white meat...whereas with a shallow pan you eliminate this and probably concentrates the heat towards the bottom where the darker meat is.

    Are you talking about an electric turkey roaster? Can you set the roaster at 500 degrees? I would wonder what would happen with the turkey sitting on the bottom of the roaster...I think that I would add 2 cups of water to the roaster after putting the turkey in to keep it from wanting to stick to the bottom before the juices start coming out, if there isn't a rack in the bottom of the roaster.
