    Biscotti.

    The ingredients:

    1 cup of sugar
    1/4 cup of olive oil
    3 cups of sifted flour
    4 eggs (or egg substitutes)
    2 tsp of baking powder
    2 tsp vanilla
    2 tsp almond extract
    1/4 cup sliced almonds

    The process:

    Mix all the ingredients in a bowl at medium speed until well blended. The
    consistancy will be sticky and like most cookie dough. This takes about 3 minutes.
    Sprinkle some flour on a board, rub your hands with flour, and place dough on board.
    Knead the dough lightly, and keep sprinkling with flour until dough is smooth and
    only slightly sticky. Cut the dough in half, and roll out to the size of 4 by 12 inches,
    and about 1/2 inch thick. Do the same with the remaining dough. Place both rolled out
    biscotti on a greased cookie sheet. Bake 20 minutes at 350 degrees f . Remove
    from oven, and cut each biscotti into slices 1/2 inch thick. This must be done while the
    dough is hot. You will end up with about 40 biscotti. Turn each slice on its side and
    bake again at 425 degrees f. for 3 minutes. This will toast the biscotti, and make
    them nice and crunchy. Remove from oven and cool for 30 minutes. Dip Biscotti in melted chocolate and sprinkle with crushed nuts if desired.

    I don't know if I've ever eaten biscotti - I'm pretty sure others have. I will bookmark and give this a try. Sounds VERY EASY.

    I've made this so many times I have some shortcuts. The dough is very sticky so I let my mixer do all the work. After mixing the ingredients together I change to a dough hook and add just enough flour to where to is easy to roll out on a cookie sheet lined with parchment paper. Sometimes I add dried fruit to the dough. I use a pizza cutter to cut the dough after the first baking into strips. I don't like it as dry as the store bought so I bake the strips until firm enough to not crumble. They are the perfect not too sweet tea or coffee break snack.

    I made biscotti for the first time this year. I used mini chocolate chips in it. What a hit- even my hubby liked it and he doesn't really care for sweets. Thats the trick- its not all that sweet. I bookmarked this page too.

    Thanks for the recipe. I have made biscotti for years.

    Fill a coffee mug with the finished biscotti, add a mug rug, and you've got a great gift.

    Easy to make variations: In place of almonds, stir in dried cranberries or cherries. Use almond extract. Also, chopped pistachios with the red fruits.

    Diced apricots and pecans.

    Orange peel, orange extract and chopped nuts.

    Yum...lots of easy stir-ins when you start getting creative.

    Biscotti is time consuming to make, but I have made all different flavors. It's so expensive to buy at the store.
