    Black Bean Salsa


    3 16 oz. cans of Black Beans (drained)

    2 8 oz. cans of small White Corn (drained)

    2 16 oz. cans diced, Rotel Tomatoes

    1 Bunch of Green Onions, diced

    1 Yellow Pepper, seeded & diced

    1 Red Pepper, seeded & diced

    1 Green Pepper, seeded & diced

    1 Clove Garlic, diced

    2 Cups of chopped, fresh Tomatoes

    1 Bunch of Cilantro, chopped

    1/4 Cup Red Wine Vinegar

    Juice of 1 Lemon

    Add any or all of the following seasonings to taste:

    Cumin
    Cayenne Pepper
    Chili Powder
    Garlic Salt


    This is very good and easy to make.

    My daughter calls that cowboy caviar and it is wonderful.

    I have never heard it called Cowboy Caviar, but it seems to fit. I think I will now think of it as such, and pass the recipe on with a new name in the future!

    Thanks for the recipe. I'm going to try it. I buy some Black Bean and White Corn Salsa that I really like, but this would be so much better made from fresh.
