Black Bean Soup

Found this great slow-cooker recipe online. LOVE slow-cooker recipes.
1 large red onion, chopped
3 carrots, sliced
2 cloves garlic, chopped
Saute the above together in 2 Tbs olive oil, then add 2 Tbs. flour, and saute another 5 mins.
Put 1 lb. dry black beans, the sauteed veggies, and a smoked turkey leg, along with water to fill in your slow cooker. Cook on low for 6 hrs.
Remove turkey leg and shred the meat. Remove 2 cups of beans and pulverize them in the food processor. If you don't have one, just mash them. Put the beans and shredded turkey back in the slow cooker and season with salt and pepper to taste.
Really good with cornbread.
My grocery store carries smoked turkey legs but if you can't find them, you could substitute ham.
