    I haven't eaten blue potatoes before. But I have eaten purple potatoes before. They were quite tasty. ;)

    I used to make french fries out of blue potatoes for the kids. They taste great!

    Hi,

    I never seen blue potatoes before?

    I went to a restaurant in Portland, Indiana last year and they served baked potatoes and they were shaped like a heart.

    I had never seen heart shape potatoes, was cool.

    Blue potatoes they make good potatoes salads very good also in soup when you make the potatoes salad in stead of white or yellow onions and red onions
    Blue potatoes are from peru you also can make like a german potatoes salad with them

    Hi Bebe: I haven't tried them but my SIL did. She fixed them for company one time. She thought they'd be something different and fun. Well, as my DBro. tells the story, all the guests sat down, looked at this blob of bluish/grey mashed potatoes in the bowl and NONE of them took any. After some conversation about blue potatoes a couple of the more adventuresome guests tried the potatoes but mostly, DBro said they "sort of MOVED the potatoes around on the plate and spread them out but didn't eat them!" :(

    I've been tempted to try them. They had some beauties at a booth at our local farmer's market last fall. Maybe I'll give them a try next time I see them.

    They're just like red potatoes or white ones, what we call "boiling potatoes" or "wax potatoes." They are not the fluffy kind like russet potatoes. The do hold up well in soups, salads and the like. But if "different" is out of the menu for you or whomever you cook for, leave them for someone who really likes them.
