    Default Blueberry pie

    I think I saw a blueberry pie recipe that used tapioca pudding mix here recently. I tried to search but had no luck. If whoever posted it could repost, I'd be very grateful!

    I typed tapioca into the search box and although not a new posting, there is a blueberry recipe thread from 2015 and the pie recipe shows tapioca in it. Hope you can find it, this old PC doesn't do links on QB anymore.

    I didn't search here, but just a general one. I grew up with and still have a box of tapioca in my pantry at all times! There is usually (and is there on my current box) a recipe for pie filling. I add a bit of nutmeg to my blueberry pie, some people a dash of almond extract.

    In all fruit pies, I use corn starch and minut tapioca mixed into the sugar as thickener. If the pie is extra juicy like peach, I use 3 tbs. of cornstarch and 2 tbs. of minut tapioca. The cornstarch thickens while it cooks and the tapioca swells as it cools. Minut tapioca here comes in a small red box in the baking aisle.

    Sorry, I am looking for a recipe that includes tapioca pudding mix as the original writer couldn't find tapioca at her grocery store. Mine doesn't have it either. I think I'm just going to try substituting the pudding mix and see what happens.
