    Default Broccoli & Chicken Casserole

    Just tried this at my friends house. Will be making this myself soon.


    4skinless, boneless chicken breast halves


    1 poundbroccoli florets, cooked


    1 (10.75 ounce) cancondensed cream of mushroom soup


    1 tablespoonmayonnaise


    1 cupshredded Cheddar cheese


    1 cupdry stuffing
    .


    Directions


    1.Preheat oven to 350 degrees F (175 degrees C).
    2.Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
    3.In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes

    I also use a recipe that have practically the same ingredients (except for the mushroom soup), then put it in a couple of crescent cans spread out & braid. It is excellent too. Here's the link in case you want to look at it: http://allrecipes.com/Recipe/Chicken...e7=Home%20Page

    I do a version using a little milk with the soup instead of mayo and a drizzle of melted butter over the stuffing mix on top. Can't go wrong using chicken and broccoli, especially if cheese is in there too.

    I have that we also use mayonnaise in and top with buttered cracker crumbs?

    My recipe uses cream of chicken soup and 1/2 cup mayonnaise, 1/2 teasp. curry powder, 1/2 teasp. lemon juice, and I toast bread crumbs in butter in a skillet before topping all. We love it to pieces!
