    Default Broccoli Cornbread -- Delicious!

    I promised some friends at church a recipe for a cornbread recipe I made today for a fellowship supper tonight. I just had to come home to put it on my fb page, and I thought I'd share it here too. Here it is.....Hope you enjoy it!

    Broccoli Cornbread

    Ingredients:

    2 boxes Jiffy corn muffin mix, or similar
    4 eggs, beaten
    1 1/2 sticks melted butter or margarine (6 ounces)
    1 pkg. (10 oz) finely chopped broccoli, thawed and drained
    1 medium onion, chopped
    1 cup cottage cheese

    Preparation:

    Combine all ingredients and pour into greased 9- X 13-inch baking dish. Bake at 375° for 35 to 40 minutes, or until lightly browned.

    This is so delicious! My recipe doesn't call for cottage cheese - hmmm - have to try that next time :-)

    Yes, that's a lot of butter, but it is sooooo good. I've made it with less butter though. It was still good, this is just what the recipe calls for, so that's what I put above for the recipe.

    Did you say your name was Paula (wink, wink) I really like Paula Dean and she uses alot of butter.

    This sounds yummy...2 of my favorite vegetables: corn bread and chopped up broccoli masked by onions. LOL
