    Default California Egg Bake

    Recently enjoyed this and wanted to share this recipe from a friend.

    California Egg Bake

    10 eggs
    1/2 cup plain flour
    1 tsp baking powder
    1/2 tsp salt
    1# shredded Monterrey Jack
    1/2 cup butter, melted
    1 small can diced green chilies
    1 pt cottage cheese

    Beat eggs until light. Add other ingredients and stir until well blended. Pour into a greased
    9 x 13 baking dish. Bake at 350 degrees for 45 minutes or until set. Cut in squares.
    Enjoy!

    How many does it serve? Sounds interesting. I am always looking for lunch options, and this sounds like something that might work with a gluten free flour blend.

    This is a very close recipe to one I've had for years. We add a few dashes to Tabasco, I prefer the green, but I have not had anyone tell me they didn't like it. Great for potlucks and family gatherings.

    It can also be easily divided for smaller families.

    Fayeberry, how many it serves depends on how small you cut the squares. At the Master Gardener meeting where I first had the dish, most people went back for seconds. I served it to my family and my 4 year old grandson wanted seconds--which is most unusual for him. Hope you try it and enjoy it. I guess you could always half the recipe if you had a smaller group.
    Karen Mc, I served it with cheese biscuits and sausage balls and it was a hit.
    Tiggersmom, I think it would be great with some Tabasco! I will try it that way next time I prepare. I think it is going to be one of my Christmas morning dishes.

    This sounds wonderful for family brunch. I can see myself adding a few extras,i.e., sliced olives, green onions, crumbled bacon, maybe mushrooms - YUM! Thanks for the recipe.

    I like the sound of this! Serving it with Sausage balls sounds just right, too! I will be trying this soon. Now, if the price of eggs would just come down..........

    Sew Krazy Girl -- you are so right, you gave some delicious options to add!!! I hope you and your family enjoy!

    Pinkiris -- so true about the price of eggs!! My city has 2 farmers markets and they are excellent resources for fresh eggs and usually at a better price than at local chain grocery.
