    On dec 24 my prayer shawl group is preparing and serving a christmas dinner for about 60 homeless folk that are in our area. I had a recipe for fresh carrots that I wanted to make, a savory recipe. One of the gals in our group was going over the menu with our pastor and he had delivered to her car four of those giant cans of carrots. I hate those sugarysweet glazed carrots. I have been looking all over the internet for something that I can make with these canned carrots. There are Lots of glazed, lots of soup, even a couple desserts.
    Do any of you have an idea to help me?

    My sister is famous for her cheesy carrots that she MUST bring to our family dinners. She starts with the bagged baby carrots and cooks them.. Seems to me you have the cooking part done. Check on line for cheesey carrot casseroles..there should be lots of recipes... have a blessed time doing for others. that is what this time of year is all about.

    It is delicious.. I too do not care for the sweet glazed carrots..Or sweet potatoes for that matter.) These are great!! She(sister) is down for them for our family gathering on the 26th.

    Most recipes call for making mac & ch, using cooked carrot in place of pasta.

    I can't figure out why anyone uses canned carrots, when fresh are so easy to make and taste so much better. Do you HAVE to use them? Maybe donate them to some of the needy?? :-)

    Here's a recipe I love using frozen carrots...you can adapt using canned carrots.

    Carrot Casserole

    Cook 2 bags frozen carrots until tender, drain.

    Make white sauce. In a pan melt and stir together:
    4 Tbsp margerine, 4 Tbsp flour.
    Add: 1/2 tsp salt, Gradually stir in 2 cups milk
    Stir and cook slowly until thickened.

    In a casserole dish layer:
    1/2 carrots, 1 c. white sauce, 1/2 pkg dry onion soup mix,6 oz. mozzarella cheese. Repeat. Top with buttered toast cubes.
    Bake 1 hour at 350 degrees.

    Google Copper Penny Carrots. They are delicious and more like a sweet and sour dressing over carrots because of the ingredients. Just had them at a pot luck again. I know the sugar can be cut down in them and canned carrots can be used in place of cooked carrots.

    cold carrot salad---canned carrots, drained thin sliced (raw)onions& green pepper, sauce can of tomato soup,1/4C each of white vinegar& brown sugar, 1T worschester sauce. carrots then the onions&peppers on top. pour sauce over. refrigerate.best if it can at least sit overnight!
