    You can pick up a Ball Canning Book at WalMart and it coves canning anything. Lots of good illustrations

    I'm very confused! How can anything canned with vinegar not considered to be pickled?

    Canned Okra
    1 gallon sliced okra
    1/2 cup vinegar
    1/4 cup canning salt
    water to cover okra
    Boil for 1 minute or until okra changes color.
    Place into hot jars and seal.
    When ready to cook, drain and rinse in cold water. Drain until all the liquid is gone. Batter and fry. {DO NOT ADD ANY MORE SALT}.
    Very good. Just handle with care because okra is very tender and fall apart.

    Okra is a vegetable...people either love it or hate it! No in betweens! It has a mucous-like feel in the mouth..what turns most people off..if you're raised on it..it's great!

    Eva Knight!!!! THAT'S IT!!!! Thanks so much!! This is the only way to can okra! It's just like fresh when fried!!!

    I'm trying this today. I've never canned okra before, but I have some in the frig now I can use this way. Thanks for the recipe.

    ok watched a cooking show with ALTON BROWN yesterday and he had a canned okra recipe on it that he swears is not slimy at all. worth checking out his recipe as I did one of his for non fried hot wings that comes out just like fried ones only they are steamed, then chilled and then baked and whola they taste like fried hot wings. He is hard to watch but his recipes are right on.

    I love it raw when the pods are small and tender. I use it sliced up in my corn bread salad. Mmmmmm good. And yes, it's a love or hate relationship.
