    Microwave Carmel Popcorn

    1 cube butter
    1 cup brown sugar, packed
    ¼ cup dark or light Karo syrup

    Combine ingredients and cook in the microwave on high until bubbly. Cook on high 3 minutes, stirring after each minute. Or cook on top of the stove. Boil for about 5 minutes or until syrup reaches the soft-ball stage.

    Add 1 tsp vanilla and ½ tsp baking soda.

    Pour syrup over 16 cups of popped popcorn. Put in a brown paper bag and cook in the microwave on high for 2 minutes, shaking after each minute. Cook on high one minute more, shaking after 30 seconds. Open bag and let cool.

    Optional: Add 6 oz. cocktail peanuts to the popcorn.

    What is the measurement of a cube of butter? I've never heard this term before.

    that's kinda what I thought and then I was reading some other post and the person said 1/2 cup. I like butter but that's a big difference in amounts.

    I agree with whoever said a cube of butter is 1/2c. You can buy a pound of butter & it often comes divided into 4 prewrapped cubes (wrapped in paper that marks off 8 Tbs. ). So for that recipe there would be 1/2 TBS per ea cup of popcorn. Definitely not non-fattening...but sounds nummy! If you want lower fat you could probably double the popcorn or half the carmel recipe or something like that.

    1 cube of butter is = to 1/2 cup

    Butter is sold in 1 pound packages with 4 cubes in each box.
    So it would also be 1/4 pound

    It is a tasty recipe though-I have made this for years.
