    SO, here is a dish that I cant wait to try! And only 1 little point per serving! WHOOP WHOOP!!

    Cauliflower with Tomatoes and Lemon

    1 small head of Cauliflower
    2 t olive oil
    1/2 t salt
    1/2 t pepper
    1 cup red and yellow cherry tomatoes
    3 garlic cloves
    2 T chopped parlsey
    1 T Grated lemon Zest

    Preheat over to 400 degrees, place cauliflower in a baking pan, drizzle with oil 1/4 t oil and sprinkle with pepper, toss to coat. Roast stirring once for 15 mins. Meanwhile, toss tomatoes, garlic amd remaining oil and salt, add to cauliflower mixture and roast about 10 mins more or until cauliflower is tender and tomatoes are softened. Transfer to serving bowl and add parsley and lemon zest, toss and ENJOY!!

    4 servings

    This reminds me of another good figure friendly dish.
    Use your same ingrediants but substitute spaghetti squash and sun dried tomatoes...lovey!
    I'll give the califlower a try tonight as I have both caulifllower and tomoatoes on hand today!.
