    The girl I look after has Celiac disease, and she can not have sugars or dairy. very tricky to find recipies for her.

    I noticed in Walmart the gluten free food aisle has expanded to include about anything you could want in gluten free foods.
    Lots of flours, mixes, cereals, pastas, ready made foods too. Unless you have the test for gluten it could be the gall bladder causing the problem. The symptoms are about the same but the gall bladder can turn to cancer if left untreated. Be sure and get the tests done by a specialist. DD found out the hard way it wasn't the gluten she had to avoid even though it made her feel better. She went to a general MD. first and immediately he said try to avoid gluten and see if that helped and if it did it was probably the cause. NOT! After two specialists, her gall bladder was taken out and if left for a few more years it would have been cancerous. It was full of cholesterol (not the kind in that effects the heart) that does not show up on scans or dye injections. Please get the confirmation is it gluten that causes the problem. :-)

    My DIL is celiac. I love The Gluten Free Goddess. She has a recipe for perfect bread machine bread. Check her out.

    I have Celiac disease and I have learned how to cook all over again. I have several recipes. Here is one I made up myself.

    Chocolate Chip Muffins (Gluten Free)

    2 1/3 C. Flour Blend
    2/3 C. Sugar
    2 1/2 t. Baking Pd.
    1 1/2 t. xanthan gum
    1 t. salt
    1 t. unflavored gelatin powder
    1/3 c. powdered milk
    1 C. Applesauce
    1/4 c canola oil
    2 large eggs
    1 t. vanilla
    3/4 c chocolate chips
    3/4 c. white chips, or butterscotch chips

    Mix all dry ingredients together then add all wet ingredients. blend till moistened,
    Gently stir in chips. put into greased or paper lined muffin cups. Bake 400 for 20 - 25 min.

    I like to use tinkyada pasts. I have been able to convert many pasta recipes to gluten-free using the gluten free pastas. I have also found some gluten-free pastas in Wal-mart, but they are not as good as tinkyada. However, some wal-marts are carrying tinkyada brand now. That is nice, since it is about a dollar less at Wal-mart.

    I am dumb when it comes to celiac but I thought you were born with this. I did not know you could develope it at a later age. Or is it there all along and just discovered at a later age. I will have to research it.

    It is genetic but something had to trigger it to become active. It can happen at any age. I went to Mexico and not knowing drank the water and got sick with giardia and a week later shingles. I am pretty sure that is what triggered mine. I was sick and having problems since then.
