    Here are two sites with fresh cooked spinach recipes that do not include any meat products.

    I love fresh kale fixed this way: Wash the leaves and shake off lightly, making sure to retain water that clings to leaves. Put in saucepan with tight lid. Don't add any more water. Heat on low until leaves are just wilted.
    Add some margarine and maybe just a sprinkle of grated parmesan cheese. Delicious and healthy with nice texture!

    Cook them like Diana Lynn suggested and if you want to add meat for seasoning use smoked turkey parts. I use to used ham hocks but now use smoked turkey.

    Here are a couple of my favorite recipes for bok choy and collards:
    Forgive the added notes; I'm recording my recipes for my daughter and have added notes to her.

    And of course, you can always google recipes for all of the greens.
    These are two of my go-to recipes for greens when I don't use pork products.

    SMOKED TURKEY is a great substitute for smoked pork products! Try this instead of "pig"!

    Greens Baked with Cheese
    Chop 4 or more cups spinach or other greens.
    mix with grated cheese (any variety you like) and spices of choice. (amount varies by quantity of greens, but you are looking to make it roughly half and half looking) {Cheese and greens, not the spices}
    Break 2-3 eggs into mixture and mix some more.
    Pour into dish that has been sprayed with cooking spray.
    Sprinkle more cheese over top.
    Cover with lid or tin foil.
    Bake in 350 oven until shrunk by half. Approx 30 mins?

    I'm sorry this is not more exact, but it is a dish that works better using your eyes.

    Sautee 2 or 3 cloves (crushed) in some olive oil, til soft. Add in several cups(til the pan is full) of kale cut into 2" pieces. Sautee to your taste or doness. Remove from heat and add balsamic vinegar to taste and salt and pepper. YUM.. You can also add fresh slivers of parmesean cheese. YUM YUM. Enjoy.
