I cannot imagine cooking for 100 so I want to wish you lots of luck!

Thanks for all the suggestions and thoughts.

I'll do the corned beef on Tuesday then slice and reheat on Wed morning. I have a dedicated Latke person and a flat top so between us we should be good for that. I'm doing Waldorf salad so I'll dice everything for that Wed AM (I'll be starting early Wed...about 4:30 or so..), vegies and dip, apple sauce, sour cream, pickle/olive tray, mustard, buns/butter, jelly donuts. That is what has been requested. I offered a hot veg and was told no, so there you go.

Anyone see any gaping holes from a Hanukkah side of things?

Cooking for 100 doesn't phase me so much, it was that I had never done corned beef before and I'm not familiar with the Hanukkah traditions.

So...how'd it turn out? Amazing, I'm sure.

It was good! Everyone enjoyed it, I was asked for recipes for my salad dressing and Waldorf Salad and people took doggie bags home. (Always a good sign.)

From a Hanukkah standpoint, if you've got donuts, no one will notice the rest. Ha.
