Sometimes if I am the only one home I make this, or its a great quick lunch!

    1/2 c. cottage cheese
    2 Tblsp. chopped dill pickle
a few chopped radishes or a bit of onion
    dash of pepper
Lettuce leaves, can be any kind
Some grated chedder cheese, optional, but I am in WI!

Mix the cottage cheese, pickle, radishes, or onion and pepper. Put on the lettuce and sprinkle with your chedder!

CarrieAnne, this looks yummy. Thanks for sharing! Will give it a try. This is a dangerous section of QB to come to - now I'm hungry. :-P
