    Default Cranberries

    Is anyone else having trouble with fresh cranberries this year? I bought a 2 lb bag, regular name brand, to make cranberry-orange relish, thinking I would just freeze the extra for another use. Good grief, at least half of the berries are soft with bad places. Lucky there was extra!

    Yikes, I better check my bags. DH has to have Cranberry pie each year. Thanks for the heads up.

    Today I made Moms Frozen Cranberry Salad - cranberries were fine. If you've not made it here's the recipe.
    Freeze 1 lb pkg cranberries beforehand. When ready to assemble salad, rinse berries with cold water. Chop them frozen in food processor , but not real fine. I tried grinder attachment on Kitchen Aid and it didn't work so good. Drain 1 or 2 cans crushed pineapple, drain really good! Mix pineapple with cranberries, add 1 cup white sugar and 2/3 pkg miniature marshmallows or whole pkg if you love them. Refrigerate overnight. Next day fold in 8 oz thawed Whipped topping. Combine well. Freeze until Thanksgiving Day. Remove early in morning and let it thaw out. Some ppl add walnuts but we have one who can't have them, so I skip that.

    Please share cranberry pie recipe, when I googled, it was all cranberry plus something else.

    My favorite cranberry salad: 1 bag cranberries, washed and picked, 2 c sugar (I use a little less), 2 c water. Heat, dissolve sugar and allow berries to pop. Add 1 lg. Raspberry Jello, stir to dissolve. Cool. Add one can crushed pineapple after removing some of the juice; 1 small can of chopped manderin oranges; 2-3 chopped apples (I leave the skins on); 1 c. chopped nuts. Chill. ---- You will get rave reviews!

    I have a bag since last year. Very frozen in the back, but still looking good. I'll let you know how they are this year when i make them
