    Cheesy Chicken

    - 2 – 4 Chicken Breasts (boneless & skinless)
    - 1 can Cream of Chicken soup
    - 1 can Cheese soup
    - Salt, Pepper, & Garlic Powder – to taste

    Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in the crock-pot. Cook on low 6 to 8 hours.
    * Serve over rice or noodles.

    Chicken In A Crock-pot

    - 2 Chicken Bouillon cubes dissolved in ½ cup hot water
    - Ό cup brown sugar
    - Ό cup vinegar
    - 1 Tablespoon soy sauce
    - ½ cup catsup
    - Sliced onion (optional)
    - Salt
    - Enough chicken to feed your family – boneless & skinless

    Place chicken in crock-pot. Sprinkle with salt and top with onion slices as desired. Combine rest of ingredients and pour on top. Cook on low 6 – 8 hours.
    * Great served on potato rolls as sandwiches.


    Chicken Roma

    - 2 ½ - 3 pounds of chicken cut into serving pieces
    - 2 teaspoons olive oil
    - 1 can (14 - 16 oz) whole peeled tomatoes undrained and chopped
    - ½ cup sliced pitted olives
    - 1 clove garlic finely chopped
    - 1 envelope beefy onion soup mix
    - Ό cup dry red wine or water

    Put the chicken pieces in crock-pot. Stir the tomatoes, olive, and garlic. Then add the beefy onion soup mix, blended with the wine and olive oil. Pour over the chicken in the crock-pot and cook on low for 5 – 6 hours.
    * Serve with hot cooked noodles.

    Mexican Chicken

    - 2 – 4 Chicken Breasts (boneless & skinless)
    - 1 can Cheese soup
    - 1 cup salsa (more if desired)
    - 1 small can corn (optional)

    Put the chicken in the crock-pot. Pour in the cheese soup and salsa. Cook on low for 6 – 8 hours. Last 30 minutes of cooking add the corn.
    * Serve with tortillas and Mexican rice.

    Chicken and Dumplings

    - 4 chicken breasts (boneless & skinless)
    - 2 teaspoons butter
    - 2 cans cream of chicken soup
    - 1 onion, finely diced
    - 2 packages (10 oz) refrigerated biscuits, torn into pieces

    Place chicken, butter, soup and onion into slow cooker and will with enough water to cover. Cook for 5 – 6 hours on high or 7 – 8 hours on low. About 30 minutes before serving, remove chicken and place on a plate. Place torn biscuit dough in the slow cooker. Cook until dough is no longer raw in the center. While it’s cooking, tear chicken into bite sized pieces. Once dumplings are done, put torn chicken back into pot, stir and then serve.

    **Salsa Chicken

    - 4 chicken breasts (boneless & skinless)
    - 1 cup salsa
    - 1 package taco seasoning
    - 1 can cream of chicken soup (or cream of mushroom)
    - ½ cup reduced fat sour cream
    - 1 bag of Spanish style microwave rice

    Place chicken, salsa, taco seasoning, and soup in crock-pot. Cook on low 6 – 8 hours, until chicken is cooked all the way through. Add sour cream just before serving. Serve over rice.


    **Chicken Pepper Pot

    - 2 - 16 oz packages frozen pepper stir-fry
    - 4 chicken breasts (boneless & skinless)
    - 10 Ύ oz can low-fat, reduced-sodium tomato soup with garden herbs and peppercorns
    - 1 tablespoon white wine Worcestershire sauce
    - ½ teaspoon garlic salt

    Place all ingredients in a 4 or 5 quart electric slow cooker. Cover and cook on high setting 4 hours, or cover and cook on high setting for 1 hour then reduce to low setting and cook for 7 hours.

    Zesty Slow Cooker Chicken BBQ

    - 6 frozen chicken breasts (boneless & skinless)
    - 12 oz bottle BBQ sauce
    - ½ cup Italian salad dressing
    - Ό cup brown sugar
    - 2 tablespoons Worcestershire sauce

    Put the chicken in the crock-pot. In a bowl mix the rest of the ingredients. Pour over the chicken. Cover and cook 3 – 4 hours on high or 6 – 8 hours on low.
    *Great served over baked potatoes*

    **Mediterranean Beef Stew

    - 2 medium zucchini, cut into bite-sized chunks
    - Ύ pound beef stew meat, cut into ½ inch pieces (I usually use over 1 lb)
    - 2 – 14.5 oz cans Italian-style diced tomatoes, undrained
    - ½ teaspoon pepper
    - Ό teaspoon ground cinnamon or 1 stick of cinnamon

    Place zucchini in the bottom of slow cooker. Add beef and remaining ingredients, do not stir. Cover and cook on high setting for 5 hours or cover and cook on low setting for 6 – 8 hours. Stir and remove and discard cinnamon stick before serving.

    **Italian Pot Roast

    - 2 ½ pounds boneless beef round roast
    - 1 medium onion, sliced
    - Ό teaspoon salt
    - Ό teaspoon pepper
    - 2 – 8 oz cans no-salt-added tomato sauce
    - 1 – 0.7 oz package Italian salad dressing mix

    Slice roast in half for even cooking and place in slow cooker. Add remaining ingredients. Cover and cook on high setting for 5 hours or cover and cook on low setting for 6 – 8 hours.

    **BBQ Pork Chops

    - 8 – 5 oz center-cut pork chops
    - Ό teaspoon pepper
    - Cooking spray
    - ½ cup thick and spicy honey BBQ sauce
    - 14.5 oz can no-salt-added stewed tomatoes, undrained
    - 10 oz package frozen chopped pepper, onion, and celery blend.

    Trim fat from pork chops, sprinkle chops with pepper. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chops, in two batches, and cook until browned on both sides. Coat slow cooker with cooking spray. Place chops in slow cooker. In a bowl combine remaining ingredients and mix well. Pour mix over pork chops. Cover and cook on high setting for 5 hours or cover and cook on low setting for 6 – 8 hours.

    **Glazed Turkey

    - 4 sweet potatoes, scrubbed
    - 1 turkey tenderloin (~ Ύ pound)
    - 14.5 oz can fat-free, chicken broth
    - 2 bay leaves
    - ½ cup apricot spreadable fruit

    Put potatoes in slow cooker. Place turkey on top of potatoes. Pour broth over turkey; add bay leaves and spreadable fruit. Cover and cook on high setting for 5 hours or cover and cook on low setting for 6 – 8 hours. Remove and discard bay leaves.

    Chili

    - 2 pounds of ground beef OR ground turkey (browned and drained)
    - 1 medium can diced tomatoes (chili tomatoes if you can find them)
    - 1 medium can tomato sauce
    - 1 can dark kidney beans
    - 1 can light kidney beans
    - 1 package mild chili seasoning
    - 1 package hot chili seasoning

    Place all ingredients in slow cooker in order, do not stir. Cover and cook on high setting for 1 hours or cover and cook on low setting for 2 – 8 hours (or until you can serve). Stir and serve.
    *Great with cornbread*

    Slow Cooker Pizza

    - 1 ½ pounds ground beef or ground turkey, browned and drained
    - 8 oz package rigatoni pasta, cooked to al dente and drained
    - 16 oz package shredded mozzarella cheese
    - 1 can cream of tomato soup
    - 2 – 14 oz jars pizza sauce
    - 8 oz package sliced pepperoni sausage (optional)

    In slow cooker, alternate layers of ground beef/turkey, noodles, cheese, soup, sauce and pepperoni. Cook on low setting for 4 hours.

    Slow Cooker Spaghetti Chicken

    - 16 oz package spaghetti, cooked to al dente and drained
    - 1 can cream of chicken soup
    - 1 can cream of mushroom soup
    - 1 can Rotel
    - 8 oz Velveeta
    - 4 chicken breasts (boneless & skinless), boiled and cut into bite-size pieces

    Put soups, Rotel, and Velveeta in slow cooker over high heat. Stir together and cook until cheese has melted. Stir cooked chicken and spaghetti into cheese mixture and heat through. Reduce heat to low and cook for about 40 minutes.

    Chicken Broccoli Cheese

    - 4 chicken breasts (boneless & skinless)
    - 1 can cream of chicken OR cream of mushroom
    - 1 can Cheese soup
    - 2 packages of frozen broccoli
    - ½ soup can of water

    Combine all ingredients in a slow cooker. Cook on low for 6 – 8 hours, or until chicken is cook through.
    *Great served as a stuffed baked potato*
