    Last year I made dill beans for the first time, and there were no dill stalks available at the grocery store. My recipe book gave the substitute of bottled dill weed and that is what I used. The beans were great - everyone raved about them and I have had people requesting more this year.

    This year we grew dill in the garden so we would have a supply - and I made the beans up 2 weeks ago. I opened a bottle last night and think my mouth is still puckered up from the vinegar and dill! Fresh dill.....WAAAAAY more potent! I only used 1 flower head per bottle like the recipe called for - but man! - these are 4x more potent than last years! Will they mellow as they mature?

    I did the same thing. Sorry to say mine did not mello any.
