Does anyone have a good cheesecake recipe

As much as I love to quilt I almost love to cook even more. I recently received a spring form pan as a gift and I have yet to use it. I am seeing cheesecake in my immediate future :) Does anyone have a really good recipe? I've looked up several but I would really hate to waste so much time on one of these little babies and not have it turn out just perfect and delicious. Thanks!

As for a recipe- doing a search on foodnetwork.com always comes up with good recipes- I think for cheesecake, what's more important than the recipe is 1
. good ingredients and
2. following instructions!
IMHO, Cheesecake tips would be:
room temperature ingredients
bake in water bath (line outside of pan to make leak-proof, find a pan or pot or whatever that your springform fits inside, and bake it with hot water all around it- it will bake evenly),
don't overcook and
allow it to rest/cool for the recommended time.
Once those are down, I've never met a cheesecake I didn't like... so have fun!

I agree... a water bath is REQUIRED for cheesecake, just gives it a better/smoother consistency. There are tons of recipes out there that are very similar, so it just kinda depends on what you're going for. I personally like the plain New York Style myself.
