    ...in case you realized you forgot you had to bring something to the cookout today.

    1 16 oz bag frozen corn
    2 cans kidney beans (or one kidney, one chick pea, or navy bean) r
    1 large green pepper
    1/2 large red onion
    2 large tomatoes
    4 packets of lime juice powder.


    Dice tomatoes, onions, and peppers. Thaw corn. Rinse beans.
    Place everything in a bowl, toss. Add lime juice powder. Mix. Refrigerate. Serve cold.
    DONE. :mrgreen:
    (I use just the lime juice powder because there is enough moisture in the tomatoes for a 'sauce'. This is a very forgiving and adaptable recipe. Use canned corn if you must, a few tablespoons of lemon juice or even a small amt of Italian dressing (powdered packet even.) It doesn't NEED any additional 'seasoning' so go lightly!)

    thanks! My DH will even eat it, even though it has VEGETABLES and NO iceberg lettuce, lol!!

    Am I the only one who doesn't know what lime juice Powder is? Are you talking about jell-o or what?

    You can buy Powdered lime Juice, called TRUE LIME. Its not sweetened or anything like that, just lime. I prefer it to 'liquid' lime juice, because I don't use it all that much in a lot of recipes, so a box lasts a while.

    Have never seen or heard of TRUE LIME, but it sounds interesting. Recipe sounds good.
