    1/4 cup butter
    2/3 cup (5 oz) evaporated milk
    3 cups sugar
    12 oz CAROB chips*
    1 jar (7 - 13 oz) marshmallow creme
    1 c chopped pecans/walnuts
    1 tsp vanilla extract

    You will need a candy thermometer & a HEAVY pot. I use my pressure cooker pot. Thoroughly butter, line with foil, & butter a 9 x 13 cake pan. Mix butter, sugar, & milk in a heavy 2-1/2 to 3 quart pot; bring to a boil over medium heat, stirring constantly. Continue boiling & stirring until candy thermometer reaches 234F. Remove from heat. Add remaining ingredients except nuts. Mix thoroughly. Add nuts & stir in well. Pour into prepared pan, tapping pan on counter to even out the mix in pan. Cool at room temperature, cut into desired size pieces.

    *CAROB chips are just like chocolate chips in look & feel). Can find them in most health food stores, The bag size may be slightly different, add or subtract the amount needed to equal the 12 oz. )
    Nuts are optional!!! Roasting them in the oven briefly helps bring out the flavor.

    Alternatives:

    Chocolate fudge: use regular semi-sweet chocolate chips.
    Mint chocolate fudge: use mint chocolate chips & 1/2 tsp mint extract
    Peanut butter fudge: use peanut butter chips & honey roasted peanuts, chopped


    This recipe is EASY TO DOUBLE as long as you have equipment to use them with.

    I was never so happy as when they decided chocolate was NOT bad for us, it was GOOD!! Antioxidants and all!! I always thought carob was a poor substitute.
