    This was in the Georgia Farm newsletter but I have augmented the recipe a little more.

    1 - Angel Food cake mix complete (Maybe Pillsbury)
    1 - 10oz can crushed pineapple
    1 Cup or more shredded coconut
    1tsp almond extract

    Combine cake mix and pineapple (Do not drain pineapple & yes, it will foam up!) Add coconut and almond extract. Spray bundt or cake pan with Pam or other sprays very lightly. Wipe out any extra oil. Pour in cake mix & bake according to directions on cake box. Let cool until cake pulls away from sides of pan. Gently turn upside down on plate when cooked. Let cool, fill middle with any berries or fruit and drizzle juice/filling over sides of cake. Sprinkle with sliced/toasted almonds or toasted coconut on top if desired. Very fast and easy. This is a favorite of our quilt guild.

    I make this freq. without coconut & almond ext. Bake it in a lightly sprayed 13x9 dish and serve it in squares. NO FAT! Great for heart patients. Serve it with cherry-berry sauce and ff Cool Whip.

    Peggy, how do you make your cherry berry sauce? I'd love to try it. This cake sounds good made either way, and I bet this sauce really sets it off. In fact, the sauce can probably be used lots of ways. Anyway, please post it. Thanks.

    So I hope this doesn't sound like a stupid question, but you just use the angel food cake mix right out of the box....not made up with eggs, etc.? And the gal that makes it without the coconut and almond extract....you just use the cake mix itself and pineapple? Sounds too easy...but just wanted to clarify before I make it. Thanks

    Nancy, make sure that the angel food cake mix says "Complete". Nothing needs to be added to mix as all the eggs etc are in it. Just add the pineapple and it will foam up. It is fun to watch the looks on those around you when it starts foaming. I even did a double take the first time. JC
