    Just like meatballs. We love them. Thanks to my dear friend Gerri!

    Saute 6-8 cl garlic & finely chopped onion.
    Add l lg peeled & diced eggplant with 1/4c. water.
    Cover & simmer until eggplant is very soft. Let cool.
    Proceed as if you are making meatballs, adding
    1 1/2 c seasoned or plain breadcrumbs
    1/2 c chopped parsley
    2 eggs or 4 egg whites
    1/2 c Parm cheese

    Make & let stand for 20 mins. Then form into balls.
    Fry or bake at 325 for 35 mins. I use egg whites & bake mine. You can also bake in a pan w sauce on top.Each is about 1 Weight Watcher point. DD#2 takes this for lunch on wilted spinach w a splash or tomato sauce. Yummy.
    I like mine in a pita w hummus & shredded veggies.

    Thanks Dotty! I will definately try these. Eggplant is one of my favs, so I am always looking for new ways to try it! Also, I am REALLY enjoying wearing my little American Heart!

    We used to grow eggplant in our garden and we really like them, especially in moussaka (reduced fat some) and ratatoule. Unfortunately, they gave me gas/us so we stopped growing them. I miss the taste but not the consequences.

    Thank you for this recipe - I was just out at the garden and there is a bumper crop of eggplant this year. My folks are just going to love these.
