    Default Even easier than mug cake

    One angelfood cake mix. Mix well with one regular cake mix of whatever flavor you prefer (I like lemon or white). Store in a large baggie in the refrigerator. To make one "cupcake", put 3 tablespoons of the mix in a mug or glass custard dish. Stir in 2 tablespoons water, just til thoroughly moistened. Microwave on high one minute. Enjoy with your favorite topping. I like a spoonful of strawberry jam or marmalade.

    This is also called 3-2-1 mug cake. Try putting chocolate chips in it or a mini candybar or even peanut butter!

    I make this frequently....it is, for me, a WWer recipe. May I ask why you put the cake mix in the fridge. I don't.....I just keep mine on the counter.

    I increased the ingredients for a larger mug of cake. Then pour cream over the top. Husband loves his at home and he fixes his own when he goes to the cabin to hunt. What a discovery.

    I have three mason jars of this mix in my house - one chocolate, one vanilla, and one with lemon cake. They are really yummy. I like to add white chocolate chips to mine, and put a little squirty whipped cream on top. Yum.
