Big chicken breast sliced horizontally and rolled with a thin ham slice and a swiss cheese. Put in pan, cover with cream of chicken soup mixed with sour cream and bake. Salt, pepper and a little onion are in there, too. Did 500 of these for my son's wedding reception. My friend pounded the chicken, but I can't do it (arthritis), so I feel it fine as long as I slice the breasts. Perfect with baked potatoes.

Crunchy Fried Chicken
Season as you like it, I like garlic, and hot spices.
Any pieces of chicken, enough oil to cover chicken half way. Seasoned flour, Seasoned egg whites " ONLY" no yokes.
Dip chicken in egg whites, roll in flour, set on a plate for 15 minutes. needs to absorb, it will be sticky.
when you are ready to fry, medium to medium high heat depending on how hot your burner gets, dip in egg whites again, then into the flour again and fry.
I put a lid on the chicken for the first 10-12 minutes, Medium heat.
Turn chicken over cook another 10-12 minutes.
If you like your batter to fluff up, add a table spoon of baking powder to the flour. Love the crunch. Syl
