Recipe for some Smothered Chicken or Pork Chops

Figured I would share this with everyone. Its a recipe I did tonight and it was good.

So you need some boneless pork chops or chicken breasts, 2 tbsp of olive oil, 2 tbps of butter, 1/2 teaspoon of salt and pepper, 1 large yellow onion chopped, 1 green and 1 red and 1 yellow bell pepper seeded and diced, 3 cloves of garlic, 3 tbps of all purpose flour, 21/2 cups of chicken broth, 1/4 cup heavy cream. and other seasonings to your taste.( I use parsley, thyme, basil and rosemary).

Season your pork chops or chicken. In a very large frying pan, heat the oil over medium high heat and cook pork chops(chicken) until browned which takes about 3 minutes on each side and then transfer them to a plate.

In the frying pan add your butter and reduce the heat to medium. Then add in the onion, the peppers and the garlic. Cover and cook until they are tender(takes about 8 to 10 minutes). Then stir in your seasonings sprinkle in the flour as well and gradually stir the stock in and bring to a simmer. (this essentially makes a gravy).

Return your chops or chicken to the pan and reduce the heat to medium low and cook until meat is done all the way through. Stir in the cream slowly.

**** When your chops or chicken is nearly done make sure you start some rice to ladle your chops(chicken) and gravy over. You want the rice to get done about the same time as your meat and gravy.

Yum! Thanks. My BF says he hates pork chops, but I buy them because they are cheap...he might just really like these though!

I never buy boneless chicken or pork chops They cost too much, for one thing, & the bones add extra flavor for another. So is it absolutely imperative that these be boneless? Can't we just pick out the bones as usual
Other than that detail, these sound absolutely yummy!!! I can't wait to try them if bones won't hurt the dish!
