    Interestingly enough, my mom didn't make ours with any caramel; I never knew it was part of the dessert. SHE didn't like caramel.....probably burned it the few times she tried to make it and hated the flavor ever after! Thus were we denied. I adore it, in all incarnations!

    Oh my, does sound delish....too involved for me to attempt...what is caster sugar? And I don't have vanilla beans in my pantry. But, if ever I go to a place that offers this on the menu, I will not hesitate to request it!

    Caster sugar is fine grain sugar. If you put regular sugar in the food processor you can make your own.

    I use vanilla bean paste. It's better then the liquid and more convenient then the vanilla bean. And then what do you do with the expensive bean. There is only so much vanilla sugar you can use. I give vanilla bean paste as a gift to my baking friends.
