French Leek Salad
This is a simple, but elegant dish that will take you right to Paris at first bite. It's also another nice way to use leeks.
1 large leek, white part only, sliced length wise into strips
2 T good olive oil
1 T apple cider vinegar
1 T fresh chopped tarragon
sea salt to taste
Clean the leek thoroughly, cut off root and green parts, slice in half lengthwise and then again in half to make ribbons
Put some lightly salted water in a frying pan and add leek strips. Cook strips until tender and drain. Cool to room temperature.
Mix together the oil, vinegar and tarragon to make a dressing and pour over the leeks.
Let marinate for a couple of hours, or longer.
To serve, arrange strips lengthwise in a dish and sprinkle with sea salt.
