Goulash - what is in it?
What we call "goulash" contains this:
macaroni, ground beef, onions, green peppers, celery, tomatoes, and kidney beans - plus seasonings.

Everything except the beans. Now around here it is called American chop suey.
Also Lynnie:
we also called that goulash made with ground beef fried with onions. Added a couple of tbls flour then water. Then we added carrots and potatoes and cooked until done. seasoning.

My mom made hers pretty close to yours Bearisgray but without the beans. She also used to ear it with sugar- ick! She wasn't much of a sweet eater either so I'm not sure where the sugar came from. I imagine that's how her mom served it. I cook a lot & that's something I've never made. I make a knock-off recipe with ground beef, macaroni & tomato soup though.

For many dishes made with tomatoes, if one adds the same amount of sugar as salt, it enhances the flavor.

Ground beef, package of onion soup mix, can of tomato soup, season salt, water, then add cooked macaroni at the end. I like to put corn in it too.
I just recently had German goulash. It was chunks of beef and lots of paprika. Not sure what else, but the meat was very tender. It was served over spaetzle.

The first time I ever ate Goulasch was in Germany in a Hungarian restaurant....1970s. So I think of goulash as having beef, tomato paste, onions, paprika. No macaroni, no beans.
What you all are describing sounds almost like chili with noodles to me.
