Love Fried Green Tomatoes. But I make them with pink tomatoes. They aren't quite ripe, but aren't really green anymore. They need to hold their shape. I dredge the slices in flour, fry in butter (the real stuff), and season well with salt and pepper. After the tomatoes are out of the pan, pour in some whole milk to make a gravy to pour over them. Serve on whole wheat toast.

I also l ike using very green tomatoes for my relish (my grandmother's recipe.) As they begin ripening, they get softer, and are harder to run through through the vegetable grinder.

Maviskw just posted my mother's recipe. ;o) I use breadcrumbs and seasoned salt and pepper. You don't know what you're missing! (Tastes similar to fried eggplant.) I had not heard of the gravy. Sounds really good. We ate them with homemade bread and butter.

No, you can use any green there is in your garden. I make India relish at the end of garden season.
