Have you made sweet potato salad ?

At a potluck last year, I tasted a salad made with sweet potatoes. I can't recall anything but I do know it was good. If you've got a good recipe, would you share it here ? Thanx

Sweet potato salad has turned into our family favorite! Our recipe is simple.
Sweet potatoes cubed and cooked, careful not to overdue.
Diced onions, diced green peppers and Helmann's mayo. Go easy on the mayo.
For us making a batch for 2 is just one sweet potato. No salt needed.

Thanks Yakkity. I might have to try it. My husband's current favorite it baked sweet potato fries so I figure he'd probably like sweet potato salad too.

Yum sounds god, I love sweet potatoes and I love potato salad must try it, I think I would use spring onions( not sure what you guys call them) instead of regular ones.
