    Found a caramel pudding cake recipe card in the FJ cookbook

    1/2 cup butter, softened
    1/2 cup sugar
    1 1/2 cups AP flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/2 cup milk
    1/2 cup raisins or nuts
    1 cup packed brown sugar
    2 cups cold water

    In mixing bowl, cream butter and sugar.
    Combine flour, baking powder and salt.
    Add to creamed mixture with milk.
    Stir until smooth, stir in raisins or nuts.
    Spread in a greased 8-inch square baking pan.
    Combine brown sugar and cold water, pour over batter.
    Bake at 350° for 40 minutes or until golden brown.
    Serve warm, 9 servings


    Says it dates back to the 1800's.

    The lemon is often a birthday 'cake' for my daughter and the chocolate one was the favorite of our son.

    Can't go wrong with either version.

    This is really hard on a diabetic. :-( I may try substituting some things. If it doesn't work, oh well. Guess I'll have to try it this way. Love chocolate - lemon - and caramel. :D :D

    I've made that for years - from an old Amish cookbook. My kids always loved that one. I just tried this one, which I think I like even better! This is from a collection of family recipes I'm putting together for my daughter.
