An oldie from Bisquick. Try it .... so easy, no mess, no crust!
    3/4 cup sugar
    2 eggs
1/2 cup Bisquick (or any packaged biscuit mix)
    1 can (16 oz. pumpkin)
    2 Tablespoons margarine or butter
1 can (13 oz) evaporated milk (NOT sweetened condensed milk)
2 1/2 teaspoons Pumpkin Pie Spice
    2 teaspoons Vanilla

Heat oven 350 degrees, Grease pie pan/plate
Beat all ingredients in your blender on high, or 2 minutes with
    hand beater.
    Pour into pie pan/plate
Bake 50-55 min. or until knife inserted in center comes out clean.

That is a great recipe It makes its own crust and I used to make it for the kids all the time.
