    Default Invented a new recipe - Oh Yeah!

    Recently I had neighbors over for a cheese enchilada dinner which turned out really good. We had enough left overs for them to take some home & for us to have some also. Well, DH is always mixing foods together so he mixed all the left over enchiladas, re-fried beans, spanish rice, enchilada sauce, & salsa together & mixed it all up until it turned into a thick substance. So, yesterday I was hungry & got out the mixture & put it on the top of a crispy fried corn tortilla & sprinkled cheese on top & microwaved it until it was hot. Then I topped it off with some chopped up lettuce & tomato & ate it. It was delicious. It could be topped with guacamole &/or sour cream in addition to the lettuce & tomato but I didn't have any of that. I've given it the name....Enchilupa...because it's a combination of cheese enchiladas & a chalupa! I love it when new things come together so well.

    That has inspired me to use my brown rice and 'create' something for supper tonight. Your creation sounds good and quick to put together.
