    There are a lot of recipes on the web, just google 'pumpkin pancake'
    oil, margarine, nuts, egg, egg substitute, sugar, splenda variations, depending on what you have and how 'healthy' you want to make them

    i made this soup/stew recipe the other day and it was absolutely delicious. Didn't change the recipe at all (other than not measuring exactly) and I would definitely make it again. The pumpkin or squash basically falls apart and thickens it nicely. The apples sweeten it nicely and are a flavorful addition. Serve with a crusty bread to soak up the broth.
    Think between T'giving and Christmas, I will make a big pot and freeze it.

    This is a pumpkin soup that I have made many times and LOVE!

    Pumpkin Curry Soup
    1 cup chopped red onion
    3 garlic cloves, crushed
    ¼ cup butter
    1 tsp curry powder
    ½ tsp salt
    1/8 tsp coriander
    1/8 tsp ground red pepper
    3 cups chicken broth
    1-16 0z can pumpkin
    1 cup light cream or milk
    1 can cannellini beans
    Finely chopped green onions for garnish
    In a large saucepan sauté onions and garlic in butter until onion is soft. Add seasonings and continue cooking for a minute. Add broth and simmer uncovered for 15 minutes. Stir in pumpkin and cream(milk) and continue cooking for 5 minutes. Garnish with green onion. Serves 4
    Add chicken(optional)
