    Latkes

    3 or 4 medium, unpeeled potatoes
    1 med. onion, chopped fine
    1 egg beaten
    3 Tbsp. flour

    I don't really measure anything. I scrub and grate potatoes (like grating cabbage for slaw). Add chopped onion, then flour and toss to coat. Stir in the beaten egg. I heat about 1/8 to 1/4 inch canola or olive oil in an electric skillet until it sizzles, then add spoonsful of the potato mixture to make separate potato cakes. Let each brown on one side, then turn to brown on the other side. Drain on paper towels and sprinkle with salt and pepper immediately.

    Thanks for the recipe. I hate to cook and this is easy enough for me to even want to do.

    I was thinking of these last week and saw some frozen at the store. Never again!
