    Leftover baked potato?????? When does one ever have a leftover potatoe? I love potatoes any way I can get them so rarely do I ever have one leftover. But I like your idea and will keep that in mind as I also love potato salad too.

    You can use the leftover baked potato (skin on) to make a small amount of potato soup by adding onion, bacon bits, leftover corn (optional) and cream or milk or fat-free Half and Half.

    ...or cut up like for potato salad, add chopped tomatoes, onions, wine vinegar and EVOO, salt, pepper to taste, basil.....Italian potato salad...at least that's what my mil called it....great in the summer.......

    I make potato salad with olives instead of pickles. When my friend was having chemo she said that was the only thing that had a decent taste. Now we both make it that way.

    Cut them into 6mm slices and fry them in butter, just enough to get crispy.
    I often peel an extra potato in the evening and hook out 2-3 pieces parboiled,to fry up in the morning with eggs for breakfast

    Always remove foil from extra baked potatoes. When foil's left on, the potato gets dark spots and you may end up throwing it away when you had other plans for it.

    I told the college-age grandkids, if there's cold boiled potatoes, cold cooked rice and hard boiled eggs in the refrigerator, you won't go hungry.

    There are two things we do with left over baked potatoes.

    One is slice them thick and fry them in butter for breakfast mojo potatoes and the other is cut them in half the long way, scoop out the center, mash the center filling up with salt, dried onion, grated cheddar cheese and plain yogurt, fill the boats and bake in the oven.

    I have also made potato salad before but it was not our favorite probably because I was too lazy to peel them.

    How about a twice baked potato? Slice off part of the skin to make an opening, hollow out the center and put in a mixing bowl. Add sour cream, cream cheese, minced onions, bacon, pepper, garlic seasoning (I don't add salt, the bacon and cream cheese provide salt) -- basically anything you want and just enough so it tastes good. Using a mixer, beat everything together until it is well mixed. Put back into the emptied potato skin heaping it up. Bake about 20 minutes, until heated through. You can make this from one or a whole crew (though I skip the skins and use a big baking dish for a crowd)
