    Turkey Enchiladas!!! Its a family Tradition. Very easy too.
    bake 350 45 mins
    2-large cans enchilada sause, 1- can olives, Flour tortias, Chedder cheese, 1- Dead turkey (goose cooked LOL)
    Shred white turkey meat. chop onion med fine. grate med chedder cheese. open and drain black olives. open pack of flour tortias wrap in a moist paper towel and mirowave for about 1 min. spray a 9by13 with Pam. now open a large can enchilada sause pour some in the bottom of the pan to cover all the bottom. take each tortia dip in the pan and then put meat,onion,olives,cheese,sause. Roll it up and do this til you can't fit anymore in the pan. Pour more sause on top put more cheese on and olives too! cover with pam sprayed foil bake. 8-) Lori K. 'icon17'

    Turkey manhatten is just a turkey sandwich, cut in half, place on a plate, add a scoup of mashed potatoes in the middle and pour chicken or turkey gravy over all.

    Turkey ranch pizza, pizza crust, with ranch dressing, diced turkey, and any of your favorite toppings, we like bacon, red onion, black olives and tomates, add cheese and bake.

    I make a good salad and use the leftover cranberries in the salad dressing. I'll share the recipe if anyone's interested, but you'll have to PM me.

    We love creamed turkey.You can make gravy & add the turkey or use cream of chicken or mushroom soup...thin a bit with milk & add the turkey. Stir till smooth, add pepper & a pinch of sage if wanted.

    Serve over mashed potatoes or toast.

    My favourtie leftover use for turkey is a "grilled turkey sandwich". I butter the outside of 2 slices of bread, cover one unbuttered side with thinly sliced turkey (I like the white meat) and cover with mozarella cheese and top with other slice, butter side out. Then I grill it like a cheese sandwich. And you have to serve it with cranberry sauce. It's really good & a tradition @ my house whenever we have turkey.

    Yes, and add 1 cup of sour cream (if you like it) and green chili's for extra flavor. Save a little of the soup mixture to pour over the enchiladas and cover with cheese. Too easy and very good.
