    I made a PA dutch concoction...
    Mix the leftover stuffing and mashed potatoes..add torn pieces of turkey..top with some melted butter and bake it.
    plain and simple..and great with leftover gravy and cranberry sauce.

    All of your ideas are great! My fave is hot turkey sandwiches but then I'm not a creative cook like all of you are. I'll have to try some new things.

    My husband brought home a turkey the other day that he got for free. I had already purchased roasting chickens to make for Thanksgiving. Well..since I see that Pat has made her turkey the day before..I think this chick is going to do it that way. It certainly will make things easier. Wish me luck.

    Good morn,Janet. Last yr at DDs we had so much going on,decided to do the turkey a day ahead as posted. It worked great!I also like to do a good bit of prep ahead.I mix stuffing, just the bread & seasonings,make cranberry relish 2-3 days ahead & keep in fridge.I brown some turkey pieces,then simmer or slow cooker covered with water till meat falls off the bone,then cool & freeze.That's broth for noodles,stuffing & gravy.The pumpkn cake is made a day ahead & I pop the pie in the oven on the morn of the day.DD brings relish tray & hot rolls.Other DD does deviled eggs & appetizer tray.Talk about stuffed!....Us, not the turkey :-) :-)

    I make my version of turkey enchilidas.

    cut up turkey, cream cheese, some salsa, green peppers, heat/stir until melted

    put large spoonful of mix in flour tortilla, fold and put into greased pan. Cover with shredded cheese

    Bake 350 for about 20 minutes

    I LOVE this leftover

    We have a family tradition of making Turkey (chicken) enchiladas with the left over turkey....after about ten years of hosting both Thanksgiving and Turkey Enchiladas, I got smart and sent the left over turkey and the Turkey Enchilada recipe home with my brother-in-law (a great cook). That way we could go to their house for the great leftovers!

    Turkey sandwiches for lunch, turkey tetrazzini for dinner, and turkey soup with chick peas, green chili, rice, and cheddar cheese. Yummy! Looking forward to the leftovers-the best part of Thanksgiving food.

    Everyones recipes sound so good! Cant wait to try them.

    Here is a recipe that my MIL used to make, and it turns out great every time. It is very quick because you dont cook the pasta! It is one of those you make at night before you go to bed, and put in the oven for a noon meal. My MIL made it alot on Saturday night before church the next day. You can also make it in the morning, and bake it for the evening meal.

    **the trick is to use really good pasta,and it wont get mushy! I use American Beauty..but any that is made with semolina will work.

    Turkey Casserole
    2 cups uncooked macaroni
    2 cups turkey ( or chicken)
    1 can cream of chicken soup
    1 can of cream of mushroom soup (I often use 2 of one kind)
    3 cups milk
    1/2 lb. of cheddar cheese (or more too taste)

    Mix together. Cover and refrigerate overnight. Cook 1 hour at 350 degrees.

    Sometimes I add other stuff...like mushrooms, onions, etc.
    It is really a great time saver, and SO easy. Enjoy!
