    Default Let's Talk Potatoes

    As we all know, March 17th was St. Paddy's Day. The grocery store was full of all foods related to that holiday, including FREE potatoes...a 10lb. bag of them! They've had the sale going on all month, so needless to say, I have a lot of russet potatoes on my hands. I've made the regulars...mashed potatoes...scalloped potatoes...breakfast potatoes...etc. Now, I am looking for more exotic recipes. Here's what I've found:

    Has anyone tried Pioneer Woman crash potatoes? Love them. Came across a recipe today that calls
    for shredding potatoes in food processor, squeezing out liquid, adding some spices like salt, pepper, garlic powder, putting into preheated waffle
    iron sprayed with oil and cooking til crisp. Going to try them.

    One of my favorite foods, hands down. Any way there’re fixed I love potatoes.

    My favorite way of fixing white potatoes was when my mother would take the left-over baked potatoes (or plain boiled potatoes), slice them thinly, then sauté them in butter until they got crispy. Nummy! Sometimes she would cut up the left-over roast and left-over green beans and add them to the frying pan too!

    Potato Pancakes made from finely shredded, raw potatoes....
    4 large baking potatoes, shredded - soak in cold water a few minutes while you combine remaining ingredients - keeps them white. Drain well and squeeze water out.
    small onion, chopped finely
    1 or 2 eggs
    1/4 cup flour
    salt & pepper

    Combine lightly and fry in hot oil - I puddle the oil and drop the pancake batter by 1/4 cup. Turn when golden into a few more drops of oil. Should be golden crispy around the edges.

    I serve with cottage cheese and dill pickles but have heard you can also use applesauce or apple/fruit compote.

    I also add shredded cabbage sometimes.... will take longer to cook at a lower temp.

    I like paprika potatoes. Microwave cubed potatoes with butter, garlic, and paprika.

    I give the grandkids this tip when they get out on their own:
    if you have cooked potatoes & hard boiled eggs in the refrigerator then you’ve got “meal starters” when you need to eat. A bowl of cold cooked rice helps too.

    I tried making waffles using frozen shredded potatoes, defrosted and squeezed out. It took forever for them to cook, but they were good. More trouble than they're worth, though!
