Lighter Tiramisu
This was featured on a diabetic recipes site and I made it for my DH and it was really very good and easy to make.
Lighter Tiramisu
Serves 9
3 ounces package ladyfingers
1/4 cut strong black coffee, chilled
1 pkg. (4 serving size) sugar-free instant vanilla pudding mix
1 cup skim milk
1 (8 ounce package fat-free cream cheese, softened
2 cups frozen, fat-free whipped topping, thawed
1/2 tsp. unsweetened cocoa
1. Split the ladyfingers apart and line the bottom of an 8 inch square glass baking dish with half of them. Drizzle ladyfingers with 1 Tbsp. of coffee
2. In a large bowl, beat the pudding mix and milk until thickened; stir in remaining coffee. Add the cream cheese and beat until smooth. Spoon the pudding mixture evenly over the ladyfingers
3. Place remaining ladyfingers on top of the pudding and top with whipped topping.
Sprinkle with cocoa. Cover and chill for 2-4 hours, or until ready to serve.
